The TrueMensa 2.0 project, directed by Prof. Dr. Tobias Gaugler, ran at four Bavarian university cafeterias. The goal was to find out how people can be motivated to adopt more sustainable and healthier eating habits, primarily by promoting plant-based meals with a low ecological footprint. The project used the “nudging” method to subtly influence food choices. The implementation varied depending on the location. In Nuremberg, salad bars and fruit stations were designed to be particularly attractive, and plant-based dishes were labeled green. In Ingolstadt, positive appeals were used, while in Eichstätt, shock tactics such as a poster with the slogan “slaughtered only for you" were used. Initial feedback was diverse: In Eichstätt, schnitzel sales decreased during the campaign, while in Nuremberg, fruit sales increased, and there were many discussions about sustainable nutrition. The survey results will be published after the test phase. Read more here.
