From May 26 to June 1, 2025, the food brand TressBrüder, in cooperation with the Management in the Organic Sector program at Nuremberg Technical University, conducted a week of action on the "True Prices" of food. The goal was to raise awareness of hidden costs—resulting from environmental pollution, social inequalities, and long-term health consequences—that are not included in the regular retail price. In the three participating restaurants, guests could choose between the regular organic price and the "true price" for selected dishes, which also takes into account the hidden costs of environmental impacts on climate, soil, water, and health. The campaign was intended not only to stimulate reflection but also to encourage more conscious consumer decisions. Led by Prof. Dr. Tobias Gaugler, the concept of True Cost Accounting (TCA) was used to determine the hidden costs of food production. Students provided scientific support for the action week, conducting surveys with 611 participants and gaining valuable insights into the practical operations of a medium-sized company. The survey results will be presented as part of TressBrüder’s 75th anniversary in September 2025. Prof. Dr. Gaugler emphasized: "Scientific findings shouldn't remain in the ivory tower; in collaboration with TressBrüder, we are bringing them into practice, where they will be tested and further developed."
